Roasted lamb & beetroot wraps

1 packet of wholewheat wraps

Rocket leaves

Roasted  lamb sliced thinly

Oven baked Beetroot with garlic

Danish feta, blue cheese flavour

Toasted Almond slivers

Ruby Splash Pomegranate reduction  to drizzle


Oven baked beetroot & garlic:

Preheat oven to 200C. Rub  baby beetroot and garlic cloves in skins with olive oil. Salt to taste and place on baking tray. Cover with foil and bake for 20 minutes. Remove foil and bake until done and pansauces starting to caramelize.

Prepare wraps according to instructions on packet. On each wrap , alternating and overlapping, place rocket leaves and lamb slices. Top with baked beetroot and garlic, feta and toasted almond slivers. Drizzle to taste  with Ruby Splash.  Fold, cut in halves and serve .
